Commercial sterility specifies that the microbial load inside a package or product environment has been optimized to extend the shelf-life of a final product and guarantee shelf stability. For both high acid (pH ≤4.5) and low acid (pH >4.5) products, aseptic processing is the most cost-effective way to achieve commercial sterility and maintain product quality.
